Kourabiedes

Ingredients

 

600 gr of butter

250 gr of sugar

2 egg yolks

 

1 tea spoon of baking soda

 

1 tea spoon of baking

powder

1 ½ tea spoon of

cinnamon

 

1 small cup of cognac

 

250 gr of almonds

roughly chopped

 

1 Kg flour

icing sugar

Preparation

 

We mix the butter (softened) with the sugar, the eggs, the baking soda diluted in the cognac, the baking powder, the cinnamon and the almonds.

 

We pour slowly the flour and we mix all together carefully. We prepare the biscuits (traditionally round but can also be half moons or stars, as you wish ... just remember that these are Christmas cookies) and we bake them in the oven, at medium temperature, for 20 minutes.

 

When they have cooled we cover them with the icing sugar.
